VARIETY: 100 % Albariño.

Small plots scattered along the Salnés Valley (between the areas of Meaño and Sanxenxo), which rise from 10 meters above the level of the Ría de Arousa, up to 190 meters in the highest part of the valley, in the parish of Simes. Its soils are mostly composed of xabre (decomposed granite). The age of the vines varies from 30 to 80 years old.

The grape clusters are selected by hand at the vineyard and then pressed without destemming. The must ferments spontaneously with its indigenous yeasts at a controlled temperature. Partial malolactic fermentation is carried out and the wine rests on its fine lees for ten months in stainless steel tanks. For bottling, no tartaric stabilization is carried out and the wine is not clarified with bentonite, only SO2 is added in moderate doses and the wine is gently filtered.

Fresh and balanced wine, full in the mouth, with aromas of stone fruit and white flowers.
